Vanilla Almond Granola Recipe
I enjoy a pretty simple breakfast during the week, but I want to make sure I have a protein packed meal to help kickstart my day. My mornings are very hectic with getting my three kids and myself up and out the door. I’ve been enjoying a bowl of Vanilla Yoplait Greek 100 and my favorite vanilla almond granola mixed right in. It’s a quick meal that gives me a protein punch to make each day a success.
Vanilla Almond Granola

Ingredients
- 1/4 cup virgin cold-pressed coconut oil
- 2 tablespoons butter
- 1/4 cup pure agave
- 2 teaspoons pure vanilla extract
- 2 cups oats
- 1/3 cup slivered almonds
- 1/4 cup ground flax seed
- pinch of sea salt
Instructions
- Preheat oven to 350F degrees.
- In a small sauce pan, over medium-low heat, melt coconut oil, butter, agave and pinch of sea salt. When completely melted, remove from heat and stir in vanilla extract.
- In a large bowl, combine oats, almonds, ground flax and oat bran.
- Stir in coconut oil/butter mixture and fully incorporate into oats.
- On a large baking sheet lined with either foil spread oat mixture evenly.
- Bake in a preheated oven for 25 minutes, stirring halfway through.
- When granola is completely cool, transfer to a mason jar.
- Granola will last approximately two weeks.
