So today I’m sharing these Cherry Banana Muffins that contain no butter or refined sugar using almond meal and gluten free oats.

They are perfect for serving up to your family for a healthy breakfast or a light snack. They are so moist and tasty that you won’t even feel guilty about having more than one for breakfast!

These muffins are quick and easy to throw together and are a great way to use up those ripe bananas.

The juicy sweet cherries are bursting with flavor and the dark chocolate chips are a perfect addition for that touch of decadence.

With cherry season upon us, there’s no excuse not to load up on some fresh cherries and bake up a batch of these delicious muffins!

Cherry Banana Muffins with Dark Chocolate Chips {Healthy and Gluten Free}

Ingredients

  • 1 cup almond meal
  • 1/2 cup gluten free oat flour (I grind my own in the food processor using certified gluten free rolled oats)
  • 1 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • 2 medium, very ripe bananas
  • 1 tablespoon of melted coconut oil, cooled
  • 1 teaspoon of pure vanilla extract
  • 1/2 cup unsweetened apple sauce
  • 1/4 cup raw organic honey or agave nectar
  • 2 eggs, room temperature
  • 1 cup chopped fresh sweet cherries
  • 1/3 cup dark chocolate chips
  • 1/8 cup of oats for topping, optional

Instructions

  1. 1. Preheat oven to 415 F. ? Line muffin pans with paper liners.
  2. 2. In a medium mixing bowl, whisk together the almond flour, oat flour, baking powder, baking soda, salt and ground cinnamon.
  3. 3. In a separate large mixing bowl, mash bananas with a fork. Add eggs one at a time and whisk well until combined. ?Whisk in honey, applesauce, vanilla extract and melted coconut oil.
  4. 4. Fold dry ingredients to wet and stir just until moistened.
  5. 5. Gently fold in cherries and dark chocolate chips. Divide evenly between muffin cups, filling all the way to the top of the pan.
  6. 6. Sprinkle topping with oats if desired.
  7. 7. Bake for 20-25 minutes or until toothpick inserted comes out clean.
  8. Yields about 9 regular size muffins
